  • 3 c. grated zucchini (4 to 6-inch squash)
  • 1 onion, chopped
  • garlic, minced
  • 1/2 c. oil
  • 1/2 c. grated Monterey Jack cheese
  • 4 eggs, slightly beaten
  • 1 c. Bisquick
  • salt and pepper to taste

Directions

    Mix all ingredients thoroughly.

    Pour into greased 9 x 9-inch pan.

    Sprinkle top with paprika.

    Bake in 350° oven for 35 minutes or until knife blade comes out clean.
