  • 1 1/4 cups all-purpose flour, sifted
  • 1/2 cup self-rising flour, sifted
  • 1 2/3 cups beer
  • None None oil, for deep-frying
  • 6 None large potatoes, peeled, quartered
  • 8 None small boneless fish fillets
  • None None tartar sauce, to serve
  • None None lemon wedges, to serve

Directions

    Combine 3/4 cup all-purpose flour and self-rising flour. Season. Gradually whisk in beer until smooth. Set aside for 15 mins.

    Meanwhile, heat oil in a wok or deep saucepan. Working in batches, deep-fry french fries for 5-10 mins, until golden. Drain on paper towels.

    Dust fish fillets in remaining flour, shaking off excess. Dip into batter then deep-fry, in batches, for 2-3 mins, until golden. Drain on paper towels.

    Just before serving, re-fry french fries for 3-5 mins, until crispy. Drain.

    Serve fish and chips with tartar sauce and lemon wedges.
