  • 1/4 lb. salt pork
  • 3 medium onions, sliced
  • 5 medium potatoes, pared, sliced or diced
  • 4 tsp. salt
  • 1/4 tsp. pepper
  • 3 c. boiling water
  • 1 1/2 lb. fresh cod fillets
  • 1 qt. milk, scalded *
  • 1 c. evaporated milk
  • 3 Tbsp. butter or margarine
  • parsley

Directions

    Cut salt pork into 1/2 cubes.

    Cook in large kettle until crispy.

    Remove bits and reserve.

    To hot pork fat, add onions. Cook until tender, stirring often.

    Top with potatoes.

    Sprinkle with salt and pepper. Pour on boiling water.

    Top with fish cut into medium pieces.

    Cover and simmer 25 minutes or until potatoes are tender.

    Add milk and evaporated milk.

    Sprinkle with parsley. Yields 6 servings.
