  • 2 large potatoes, peeled and cubed
  • 2 1/2 pt. chicken broth
  • 2 sliced carrots
  • 2 stalks celery, finely chopped
  • 1 lb. cod, scrod or halibut
  • 1/2 lb. medium shrimp
  • 2 Tbsp. margarine
  • 18 oz. V-8 juice
  • 1/4 tsp. thyme (optional)
  • 1 tsp. parsley
  • dash of pepper
  • 1 medium onion, chopped

Directions

    Peel and slice carrots, onions and celery.

    Saute them in margarine in a large pot (about 5 minutes).

    Add the potatoes, chicken broth, V-8 juice, thyme, parsley and pepper.

    Bring to a boil.

    Reduce heat and simmer, uncovered, for 15 minutes.
