  • 1 onion large, peeled and sliced
  • 1 1/3 pounds potatoes peeled and sliced
  • 1 pepper
  • 3 tomatoes
  • 6 3/4 tablespoons olive oil
  • 1 stew pack Lusomar
  • salt
  • 1 chili pepper

Directions

    Place onion on the bottom of a pan. Top with potatoes.

    Wash and cut peppers into strips being careful to remove all of the seeds and the pith.

    Spread pepper strips on top of the potatoes.

    Wash tomatoes, cut in chunks, add to pan.

    Drizzle with olive oil, cover pan, and cook over low heat, stirring occasionally.

    After about 10 minutes, fish, and chili pepper cut in pieces.

    Cover the pan so the fish can cook and soak up all the flavor. Simmer for about 10 more minutes.

    Adjust the seasonings, serve immediately.
