  • 8 soft corn tortillas
  • 3 (6-ounce) poached cod fillets, flaked
  • 1 teaspoon grated fresh ginger
  • 2 teaspoons fresh lime juice
  • 1 bunch arugula (washed, dried, and chopped)

Directions

    Heat oven to 400°F. Wrap the tortillas in aluminum foil and heat in the oven until warm and slightly softened, about 5 minutes.

    Meanwhile, in a small bowl, combine the cod, ginger, and lime juice and toss. Spoon some of the fish onto a tortilla, then top with some arugula and guacamole, if desired.
