Fish With Lemon Spinach

- 2 small onion, cut 1/4-inch slices
- 2 Tbsp. margarine or butter
- 2 Tbsp. flour
- 1 c. milk
- 1 tsp. instant chicken bouillon
- 1 (16 oz.) pkg. frozen fish fillet, thawed and separated
- 1/2 tsp. salt
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 3 Tbsp. lemon juice
- 2 Tbsp. grated Parmesan cheese
Directions

1Cook and stir onions and margarine until tender.

2Stir in flour.

3Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat.

4Stir in milk and instant bouillon.

5Heat to boiling, stirring constantly.

6Boil and stir 1 minute.

7Arrange fillets in an oblong baking dish.

8Sprinkle with salt.

9Spoon spinach around fish; drizzle lemon juice over spinach.

10Spoon sauce evenly onto fish and spinach.

11Cook uncovered in a 350° oven until fish flakes with fork, about 20 to 25 minutes.

12Sprinkle with cheese and paprika.
