Fish With Rice Stuffing

  • 1 (3 lb.) fresh water fish
  • 2 Tbsp. unsalted butter
  • 1/2 lb. mushrooms, chopped
  • 2 Tbsp. chopped onion
  • 1/4 c. unsalted butter
  • 1 c. cooked rice
  • pepper
  • 1/2 tsp. poultry seasoning
  • 2 beaten eggs

Directions

    Place fish in shallow pan.

    Broil under moderate heat 15 minutes, basting with 2 tablespoons unsalted butter.

    Turn; broil 10 minutes.

    Season with pepper.

    Cook mushrooms and onions in remaining 1/4 cup unsalted butter until tender.

    Add rice, seasonings and eggs; mix well.

    Cook over low heat until eggs are set.

    Mound stuffing in center of serving platter.

    Place fish, skin side up, over stuffing.
