- 3 1/2 Tbsp. cornstarch
- 2 Tbsp. sugar
- 1/8 tsp. salt
- 1 c. syrup (from canned peaches)
- 1 c. milk
- 1 slightly beaten egg
- 1 tsp. grated lemon rind
- 12 marshmallows
- 6 canned peach halves, drained
Directions

1Mix cornstarch, sugar, salt and 1/2 peach syrup.

2Mix remaining peach syrup with milk and scald.

3Stir in cornstarch mixture slowly. Cook over hot water for 10 minutes, stirring constantly, until thick and clear.

4Mix small amount into egg. Return to

5remaining hot mixture and blend.

6Add lemon rind and 6 marshmallows which have been cut into bits.

7Cook about 5 minutes, stirring constantly.

8Turn into 6 glass custard cups. Top with peaches (hollow side up).

9Place remaining marshmallows in peach hollow and place under broiler until browned.

10Yields 6 portions.
