- 1 Zucchini
- 1 summer squash
- 2 eggs, beaten
- 1 cup corn meal
- 1 salt to taste
- 1 pepper to taste
- 1 cayenne to taste
- 3 cup vegetable oil
Directions

1in a deep skillet heat the oil on a med high heat

2chop your squash and zucchini into med thick slices depending on your tastw you may want them thinner.

3in a bowl beat the eggs, and place cornmeal on a plate for dipping.

4add the seasonings to the cornmeal and stir.

5Drop the veggies into the egg wash then into the cornmeal in batches.

6then place in the skillet not over crowding.

7brown on both sides.

8place on a paper towel to drain and dash with a lil more salt.
