Florentine Chicken

Ingredients

  • 2 whole chicken breasts, boned and halved
  • 1 to 2 c. spaghetti sauce with mushrooms
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 (8 oz.) can mushroom stems and pieces or 4 oz. fresh mushrooms, sliced and sauteed in butter
  • 4 slices Provolone cheese

Directions

    Saute chicken breast fillets until lightly browned.

    Pour spaghetti sauce over chicken and simmer 10 to 15 minutes. Meanwhile, divide spinach in 4 equal portions and arrange a bed of spinach in small broiler-proof casseroles.

    Top each portion with a chicken fillet, 1/4 cup spaghetti sauce, 1/4 of the mushrooms and a slice of cheese.

    Broil until bubbly and browned.
