Florentine Soup

Ingredients

• 3 Tbsp. butter
• 4 slices bacon, diced
• 1/2 c. diced onion
• 1/2 c. sliced mushrooms
• 1/4 c. flour
• 1 gal. milk, warmed
• 1/4 c. Minor's chicken soup base*
• 1/2 c. Cheddar cheese
• 1/2 c. Mozzarella cheese
• heavy cream
• 1/2 tsp. ground mustard
• 1/2 tsp. white pepper
• 1 tsp. ground thyme
• 1/2 tsp. garlic powder
• few drops Tabasco
• 2 bags spinach, cleaned
