- 2 Tbsp. butter or margarine
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 lb. mushrooms, sliced
- 1 (1 lb.) can tomatoes, drained
- 2 Tbsp. lemon juice
- 1/4 tsp. dried leaf tarragon
- 1 bay leaf
- 1/4 tsp. Tabasco sauce
- 1/2 tsp. salt
- 1 lb. flounder fillets
Directions

1Melt butter or margarine in a large skillet.

2Add onion and green pepper; cook until tender.

3Add mushrooms; cook 3 minutes. Add tomatoes, lemon juice, tarragon, bay leaf, Tabasco sauce and salt.

4Cover; simmer 20 minutes.

5Add flounder fillets; cover. Simmer 5 to 10 minutes, until fish flakes easily.

6Makes 3 to 4 servings.
