Flourless Chocolate Cake

- 2 c. (12 oz.) semi-sweet chocolate chips
- 1/2 c. butter
- 1/4 c. sugar
- 1/4 c. water
- 1 tsp. instant coffee granules
- 3 eggs, lightly beaten
- whipped topping (optional)
Directions

1Preheat oven to 425°.

2Butter the bottom and sides of a 9-inch pie plate.

3Place a 12 x 12-inch sheet of waxed paper in the pie plate and butter the waxed paper.

4In a medium saucepan, combine chocolate chips, butter, sugar, water and coffee granules. Heat over medium heat 2 to 3 minutes or until mixture is melted and smooth, stirring constantly.

5Remove from heat and allow to cool slightly.

6Stir in eggs until mixture is smooth.

7Pour into pie plate.

8Bake 10 minutes; the cake will not be completely set in the middle.

9Cool. Cover loosely, then chill 6 to 8 hours or overnight.
