Ingredients

  • 1 1/2 c. boiling water
  • 1 c. yellow corn meal
  • 1 Tbsp. margarine, softened
  • 3 eggs, separated
  • 1 c. buttermilk
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • margarine and/or maple syrup (syrup is optional)

Directions

    Heat oven to 375°.

    Stir boiling water into corn meal; continue stirring until mixture is lukewarm.

    Blend in 1 tablespoon margarine and the egg yolks.

    Stir in buttermilk, salt, sugar, baking powder and soda.

    Beat egg whites just until soft peaks form; fold into batter.

    Pour in greased 2-quart casserole dish.

    Bake until knife inserted near center comes out clean, 50 to 60 minutes.

    Serve with margarine and/or syrup.
