- 2 lb. yellow squash
- 1/2 tsp. salt
- 1/4 c. chopped onion
- 2 eggs, beaten
- 1/4 lb. shredded Cheddar cheese
- 2 Tbsp. sugar
- 1/2 c. Ritz cracker crumbs
Directions

1Cook squash and onion in salted water until tender. Drain and cool. Add beaten eggs and mix well. Add sugar and cheese. Place in a greased casserole dish. Sprinkle cracker crumbs on top and dot with butter. Sprinkle with black pepper and paprika. Bake at 350° for 20 minutes.
