  • 2 lb. yellow squash
  • 1/2 tsp. salt
  • 1/4 c. chopped onion
  • 2 eggs, beaten
  • 1/4 lb. shredded Cheddar cheese
  • 2 Tbsp. sugar
  • 1/2 c. Ritz cracker crumbs

Directions

    Cook squash and onion in salted water until tender. Drain and cool. Add beaten eggs and mix well. Add sugar and cheese. Place in a greased casserole dish. Sprinkle cracker crumbs on top and dot with butter. Sprinkle with black pepper and paprika. Bake at 350° for 20 minutes.
