  • 3 (46 oz.) cans chicken broth
  • cooked, shredded white meat from 1 large chicken
  • 5 ribs celery, finely chopped
  • 2 lb. frozen spinach, thawed and chopped
  • 2 eggs
  • 1 c. Parmesan cheese
  • 1 bunch chopped parsley

Directions

    Put broth, white meat, celery and parsley in a large soup pot and cook for 30 minutes.

    Mix thawed spinach, eggs and cheese and drop into boiling soup.

    Cook for 15 more minutes.
