- 3 (46 oz.) cans chicken broth
- cooked, shredded white meat from 1 large chicken
- 5 ribs celery, finely chopped
- 2 lb. frozen spinach, thawed and chopped
- 2 eggs
- 1 c. Parmesan cheese
- 1 bunch chopped parsley
Directions

1Put broth, white meat, celery and parsley in a large soup pot and cook for 30 minutes.

2Mix thawed spinach, eggs and cheese and drop into boiling soup.

3Cook for 15 more minutes.
