- 4 fish fillets
- 1 T. vegetable oil
- salt and pepper to taste
- 1 small carrot, sliced lengthwise
- 1/2 medium onion, sliced
- 1 T. fresh parsley, minced
Directions

1Place each fish portion in center of a 12-inch square of foil. Brush with oil.

2Sprinkle with salt and pepper.

3Put carrot and onion on fish.

4Seal foil.

5Place in shallow pan.

6Bake for 25 to 30 minutes.

7Fold back foil and sprinkle fish with parsley.

8Serve in foil.
