Ingredients

  • 1 boned and rolled rump or chuck roast
  • seasoned flour
  • 1 clove garlic, mashed
  • 1/4 c. coffee or water
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. bottled meat sauce
  • 12 to 14 small carrots, scraped
  • 6 to 8 new potatoes, well scrubbed

Directions

    Rub roast with seasoned flour into which garlic has been mashed.

    Place large piece of heavy-duty foil on baking pan and center roast on it.

    Put under broiler.

    Brown meat well on all sides, turning with long-handled meat fork once or twice.

    Drain or spoon off fat left in foil after browning.

    Combine liquid and seasonings.

    Pour over roast.

    Place vegetables around roast. Seal foil at top and sides.

    Roast at 375° for 2 1/2 hours.
