- 2 orange roughy fillets, thawed
- 1 large potato, peeled and sliced thin
- 1 large carrot, peeled and sliced
- 1/2 c. green beans
- 6 slices onion
- 1 Tbsp. margarine
- salt and pepper
Directions

1Place each fillet on a piece of aluminum foil.

2Put potatoes into microwave-safe dish (covered) and cook on High for 3 to 5 minutes.

3Then top each fillet with 1/2 of the potatoes, carrots, green beans, onion and margarine.

4Add salt and pepper to taste. Fold the foil into a packet, covering all ingredients and bake for 20 to 25 minutes at 400°.

5Test fish with fork to make sure it is cooked thoroughly.
