Foiled Orange Roughy

  • 2 orange roughy fillets, thawed
  • 1 large potato, peeled and sliced thin
  • 1 large carrot, peeled and sliced
  • 1/2 c. green beans
  • 6 slices onion
  • 1 Tbsp. margarine
  • salt and pepper

Directions

    Place each fillet on a piece of aluminum foil.

    Put potatoes into microwave-safe dish (covered) and cook on High for 3 to 5 minutes.

    Then top each fillet with 1/2 of the potatoes, carrots, green beans, onion and margarine.

    Add salt and pepper to taste. Fold the foil into a packet, covering all ingredients and bake for 20 to 25 minutes at 400°.

    Test fish with fork to make sure it is cooked thoroughly.
