Food Processor Pie Crust

Ingredients
- 2 c. flour
- 1 tsp. salt
- 1/2 c. vegetable shortening, chilled
- 4 Tbsp. butter, chilled
- 6 Tbsp. ice water
Directions

1Insert metal blade into processor.

2Add flour, salt and fat. Process with short bursts until consistency of coarse meal.

3Pour ice water through feed tube; process.

4Stop as soon as dough begins to form.

5If necessary, add a bit more water.

6Remove; divide in two.

7Flatten slightly; wrap in waxed paper.

8Refrigerate 4 hours or freeze 1 hour.

9On lightly floured cutting board, roll out 1/8 inch thick, allowing 1 inch margin around pan.

10Fit into pan gently; do not stretch or pull.

11To eliminate sogginess, brush bottom of crust with egg white.

12Prick well with fork.
