1Meat should be at room temperature 1-2 hours, seasoned. Turn oven to 450, preheat. Season roast, place in roaster and cover. Roast prime rib for 45 minutes; turn off oven. Do not open door for 5-7 hours! Turn oven on at 450 and roast for 30 minutes before serving. Roast will be perfect medium-rare.
