Ingredients

  • 2 teaspoons olive oil
  • 2 celery ribs, finely chopped
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 12-1 teaspoon ground chili powder, depending on taste
  • 2 (400 g) cans chopped tomatoes
  • 2 (400 g) cans four-bean mix
  • 1 tablespoon lime juice
  • sour cream, to serve
  • chopped coriander, to serve

Directions

    Heat oil, cook celery and onion.

    Cook about 6 minutes till soft.

    Add garlic and chilli, cook 2 minutes.

    Add tomatoes and beans, bring to boil.

    Simmer 20 minutes, add lime juice.

    Add salt and pepper to taste.

    Serve with sour cream and chopped coriander on top.
