- 2 skinless, boneless chicken breasts (approximately 1 1/4 lb.)
- 3 Tbsp. mayonnaise
- 1/2 c. celery, diced
- juice of 1 lemon
- about 1 Tbsp. soy sauce
- about 1 tsp. curry powder
- 1/2 c. cashews
Directions

1Poach chicken breasts.

2Cut into bite sized pieces.

3Mix mayonnaise, lemon juice, soy sauce and curry powder.

4Add chicken and celery, chill.

5Just before serving, add cashews and more dressing ingredients to suit taste and consistency.

6Serve on lettuce.
