- 16 oz. pkg. of elbow macaroni
- 1/4 c. butter or margarine
- 1/4 c. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 c. milk
- 2 c. (8 oz) shredded cheddar cheese
- 1- 1/2 c. (6 oz) shredded Swiss cheese
- 1/2 c. crumbled blue cheese
- 1/2 c. grated Parmesan cheese
Directions

1Cook macaroni according to package directions.

2Meanwhile, in a saucepan over medium heat, melt butter.

3Stir in flour, salt and pepper until smooth.

4Bring to a boil; boil and stir for 2 minutes.

5Gradually add milk, stirring constantly.

6Reduce heat and cook until thick.

7Add macaroni and stir until blended.
