Ingredients
- 1/2 c. brown rice
- 1/2 c. lentils
- 1/2 c. barley
- 1/2 c. split peas
- 2 Tbsp. chopped celery
- 2 Tbsp. chopped green onions
- 1 garlic clove, finely minced
- 1/2 c. chopped olives
- 2 Tbsp. chopped green pepper
- olive oil
- vinegar
- salt and pepper
- Italian seasonings
Directions

1Cook each of the grains according to package directions. Drain and cool slightly; mix together.

2Mix in celery, onions, garlic, green pepper and olives.

3Pour olive oil over (just enough to coat the mixture).

4Sprinkle on some, a tablespoon or so. Season and taste to adjust seasonings and dressing to your liking. (Vinegar could be red wine vinegar or could use part wine vinegar and balsamic.)
