- 2 large carrots
- 1 12 cups fresh green beans
- 1 small onion
- 5 -6 small new potatoes
- 1 tablespoon oil
- 2 garlic cloves, minced
- 2 teaspoons soy sauce
- 12 teaspoon ginger
- black pepper, to taste
Directions

1Preheat the oven to 425 degrees.

2Wash all the vegetables.

3Peel and trim the carrots and slice into 1/2 inch pieces on the diagonal.

4Snip the ends off the green beans and snap into 2 inch pieces.

5Slice the potatoes in half and peel and quarter the onions.

6In a large bowl, combine the remaining ingredients.

7Toss with the vegetables to coat.

8Spread on a baking dish and bake for 20-25 minutes or until fork tender.

9Stir once.
