Ingredients

  • 1 lb. frankfurters, cut in half diagonally
  • 1/2 c. onion, chopped
  • 1/2 tsp. basil leaves; fresh, crushed and chopped
  • 2 Tbsp. butter or margarine
  • 10 3/4 oz. cream of celery or cream of mushroom soup
  • 1/2 c. milk
  • 1/2 c. tomatoes, chopped (or canned)
  • 2 pkg. (any flavor) Ramen noodles, cooked (al dente) and drained, do not use spice packet
  • 1 Tbsp. parsley, chopped fine
  • 1/2 c. mozzarella cheese, shredded
  • salt and pepper to taste
  • 1 tsp. Tabasco sauce (optional to add a little kick)

Directions

    In an ovenproof skillet, brown frankfurters in butter.

    Add onion and basil, cook until tender.

    Preheat broiler.

    Stir in soup, milk, tomatoes, noodles, parsley, salt and pepper; Tabasco if desired.

    Heat, stirring occasionally for 4 minutes.

    Sprinkle cheese on top and place on top rack of oven. Bake until cheese just turns brown, about 4 minutes.

    Remove and serve.
