Freezer Peach Pie Kit

Ingredients

  • 8 cups peach peel and slice
  • 1 tablespoon lemon juice
  • 3/4 cup sugar
  • 2 tablespoons flour All-Purpose
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 5 pounds all-purpose flour bag of, hold back about 2 cups
  • 3 pounds vegetable shortening
  • 4 tablespoons sugar
  • 2 tablespoons salt
  • 4 tablespoons vinegar
  • 4 eggs
  • 2 cups water

Directions

    Combine all the ingredients in a large bowl. Divide the peaches among the number of indicated freezer bags. Label and freeze.

    In a large bowl, combine the flour (don't forget to hold back 2 cups), sugar and salt.

    With a fork or pastry cutter, combine the shortening with the flour mixture.

    In a separate bowl (I use the empty shortening container to minimize dirty dishes), beat vinegar, eggs and water.

    Add the liquid mixture to the flour mixture and blend with a fork until all ingredients are moistened.

    Continue to blend using hands and fold dough into a ball. Cover and chill at least 15 minutes.

    Divide dough into about 20 balls. Each ball should be enough to make a crust.

    To freeze, wrap dough balls in plastic wrap, then store in a freezer bag indefinitely.

    Serving Day Directions Drain a majority of the excess water from the thawed peaches. Place in a prepared pie crust or in a 13x9 pan with cobbler topping. Bake according to favorite pie recipe.
