Ingredients

  • 2 cups Watermelon Juice (see Directions)
  • 1 box (large 6 Oz. Box) Jell-O Gelatin, Blackberry Fusion (or Your Favorite Flavor)
  • 2 cups Boiling Water
  • 2 packages (5 Oz. Sleeve From A 14.4 Oz. Box) Graham Crackers
  • 1/2 cups Sugar
  • 1/2 cups Butter, Melted
  • 1 tub (8 Oz. Tub) Whipped Topping
  • 2 cups Fresh Blueberries, Washed And Dried

Directions

  1. 1
First thing first. Get out your blender and puree chunks of fresh watermelon. You'll need 2 cups for the recipe. (Cold, so do this ahead of time so the juice can sit in the fridge.)
  2. 2
Start by mixing the Jell-O with the boiling water until completely dissolved. Next, add the COLD watermelon juice. Put Jell-O in the fridge for about 1 hour, or until soft set (not runny!).
  3. 3
While the Jell-O is setting up, place the graham crackers in your blender and make crumbs. Then in a medium bowl, mix graham cracker crumbs, sugar, and melted butter with a fork until the butter is evenly distributed. Gently press half of the graham cracker crumb mixture into the bottom of a 9x13 pan.
  4. 4
When the Jell-O is set, whip the mixture with a hand mixer. Add the whipped topping and mix well. Then gently fold in the blueberries.
  5. 5
Spoon the Jell-O mixture onto the graham cracker crust. Smooth the top, then spoon the remaining graham cracker crumb mixture over the top, spreading evenly.
  6. 6
Place the pie in the fridge to set for about 4 hours. Remove immediately before serving. Keep refrigerated.
  7. 7
This freezerbox pie recipe is quite versatile. You can use any flavor Jell-O with most any fruit combination and the results will still turn out delicious! Try with your favorite flavor and fruit, and let me know how it turned out!
