  • 2 eggs, well beaten
  • 1 1/4 c. oil
  • 2 c. brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 c. flour
  • 1 tsp. vanilla
  • 3 c. peeled and chopped apples
  • 1 c. chopped nuts

    Mix well-beaten eggs, oil, brown sugar, baking powder, baking soda, salt, cinnamon and flour with a mixer; mix well.

    Then add vanilla; mix well.

    Mix in apple and nuts last with spoon.

    Bake at 350° for 25 minutes in 9 x 13-inch pan or in Bundt pan for 45 to 60 minutes until tester comes clean.
