- 2 eggs, well beaten
- 1 1/4 c. oil
- 2 c. brown sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 3 c. flour
- 1 tsp. vanilla
- 3 c. peeled and chopped apples
- 1 c. chopped nuts
Directions

1Mix well-beaten eggs, oil, brown sugar, baking powder, baking soda, salt, cinnamon and flour with a mixer; mix well.

2Then add vanilla; mix well.

3Mix in apple and nuts last with spoon.

4Bake at 350° for 25 minutes in 9 x 13-inch pan or in Bundt pan for 45 to 60 minutes until tester comes clean.
