French Beef Au Gratin

- 1/2 c. margarine
- 4 c. thinly sliced Vidalia or white onions
- 1 lb. beef tenderloin, cut in 1/2-inch cubes
- 3 Tbsp. flour
- 1 Tbsp. brown sugar
- 1 tsp. cumin
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 qt. beef broth
- 2 c. cooked fettuccine
- 1 c. (4 oz.) shredded Mozzarella
- 1/2 c. grated Parmesan
Directions

1Melt margarine and saute onions 15 to 20 minutes.

2Remove onions from pan and brown meat well.

3Return onions and any juice to pan.

4In small bowl, mix flour, sugar, cumin, salt and pepper. Add to pan; stir 1 minute until bubbly.

5Gradually add broth, stirring to scrape drippings from pan.

6Simmer 10 minutes.

7Heat broiler.

8Place 1/2 cup of fettuccine in each of four 16-ounce bowls.

9Divide beef mixture over pasta.

10In a bowl, mix cheeses together; sprinkle evenly over beef.

11Broil about 5 minutes until cheese is melted and lightly browned.
