  • 6 slices bacon
  • 2 lb. ground beef or pork and beef mixture
  • 1 can (16 oz.) red kidney beans, drained
  • 1 can (16 oz.) white Northern beans, drained
  • 1 can (16 oz.) sliced carrots, drained
  • 1 can (16 oz.) tomatoes, undrained and broken up
  • 1 Tbsp. parsley flakes
  • 2 tsp. salt
  • 1 tsp. thyme
  • 1/4 tsp. pepper

Directions

    Saute bacon in a large pan until fat starts to cook out. Remove and drain on paper towels.

    Shape ground beef in a large patty.

    Brown for 5 minutes on each side in same pan.

    Pour off drippings, then break meat into chunks.

    Stir beans, carrots and tomatoes into meat.

    Add seasonings.

    Heat to boiling.

    Spoon into a 10-cup baking dish.

    Place bacon on top.
