French Cream Pie

- 1 c. sugar
- 2 c. milk
- 4 eggs
- 4 2/3 Tbsp. cornstarch
- 1 Tbsp. vanilla
- 4 Tbsp. butter
- 1 c. coconut
- baked pie shell
Directions

1Scald sugar and 2 cups milk in top of double boiler; mix egg yolks, cornstarch and 2/3 cup milk until smooth.

2Add to milk mixture.

3Cook until thick, stirring constantly.

4Remove from fire. Add pinch of salt, vanilla and butter.

5Stir until butter melts. Add grated coconut.

6Pour into cooled, baked pie shell.

7Top with meringue or use whipped cream.

8Also makes a good banana cream pie.
