- 3 eggs
- 3 Tbsp. milk or cream
- dash of salt and pepper
- 1 Tbsp. fat
Directions

1Beat eggs until fluffy.

2Beat in milk or cream and seasoning. Pour into fat in skillet over low heat.

3Cook slowly, keeping heat low.

4As under surface becomes set, start lifting it slightly with spatula to let uncooked portion flow underneath and cook.

5To add herbs, cheese or meat, sprinkle 1/2 tablespoon per egg over top of eggs.

6As soon as all of the mixture seems set, fold and roll it. Serve immediately.

7Makes 2 servings.
