  • 1/4 c. vegetable oil
  • 2 c. sugar
  • 3 eggs, well beaten
  • 3 c. fresh apples, peeled, cored and chopped (any type)
  • 1 c. chopped pecans
  • 3 c. flour, sifted 3 times
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. allspice
  • 2 tsp. vanilla

Directions

    Combine oil, sugar and eggs in large bowl.

    Add apples and stir.

    Add nuts, flour, salt, soda and spices.

    Stir well.

    Add vanilla.

    Pour into 9 x 13-inch cake pan which has been greased and the bottom lined with waxed paper.

    Put cake into cold oven. Turn temperature to 325°.

    Turn oven on and bake 1 hour or until done.

    Ice with Penuche Icing.
