  • 1 1/2 c. vegetable oil
  • 2 c. sugar
  • 3 eggs
  • 3 c. flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg or mace
  • 1 c. chopped nuts
  • 1 c. chopped dates
  • 3 c. finely chopped raw apples
  • 2 tsp. vanilla flavoring

Directions

    Mix sugar and vegetable oil; beat at high speed. Add eggs, one at a time, beating for 1 minute after each addition.

    Sift together dry ingredients. Add vanilla flavoring and dry ingredients; mix. Dredge nuts and dates in a small amount of flour. Add to batter. Add apples. Do not add any liquids. This is a very stiff batter. Pour in Bundt pan that has been lined with wax paper. Bake at 325° for 1 hour and 15 minutes.
