Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 eggs
  • 2 Tbsp. vanilla extract
  • 3 c. peeled, diced cooking apples
  • 1 c. chopped pecans

    Combine first 5 ingredients and set aside.

    Combine sugar, oil, eggs and vanilla in a large bowl; mix well.

    Stir in apples and pecans (batter will be very stiff).

    Spoon batter into a greased and floured 10-inch Bundt pan.

    Bake at 325° for 1 hour and 30 minutes or until a wooden pick inserted in center comes out clean.

    Cool cake in pan 10 minutes.

    Remove from pan and cool completely.

    Store in airtight container.
