  • 3 c. diced apples, peeled
  • 2 c. sugar
  • 2 eggs
  • 1 1/4 c. oil or shortening
  • 3 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 c. chopped pecans

    Sprinkle diced apples with 1 cup sugar; set aside.

    Beat eggs and remaining cup of sugar. Add oil; mix well.

    Add dry ingredients.

    Continue beating until well mixed.

    Add vanilla, apples and pecans.

    Mix well.

    Bake in Bundt pan at 350° for approximately 1 hour.
