  • 2 c. self-rising flour
  • 2 c. sugar
  • 1 Tbsp. baking soda
  • 1 Tbsp. cinnamon
  • 1 1/2 c. oil
  • 4 eggs (unbeaten)
  • 1 Tbsp. vanilla extract
  • 2 apples, finely chopped (Red Delicious)

Directions

    Preheat oven to 350°. In large bowl, blend all dry ingredients. Add oil, eggs and vanilla; mix well. (No electric mixer necessary; I use a large wire whisk.) Add apples last. Pour into a greased and floured 9 x 13 cake pan. Bake for 45 minutes.
