  • 1 c. oil
  • 2 c. sugar
  • 3 eggs, well beaten
  • 2 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • 4 c. chopped and peeled apples
  • 1 c. ground pecans

Directions

    Combine oil and sugar; beat in eggs.

    Sift dry ingredients and add to egg mixture.

    Fold in vanilla, apples and nuts.

    Bake in a 9 x 13-inch pan (prepared with Pam and flour) at 325° for 55 minutes.

    Cool and frost if desired.
