  • 1 1/4 c. vegetable oil
  • 2 c. sugar
  • 3 eggs, beaten
  • 3 c. plain flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 c. raw apples (unpeeled), grated
  • 1 1/2 c. pecans, chopped
  • 1 tsp. vanilla

Directions

    Mix first 3 ingredients in order given.

    Sift together next 4 ingredients; add to first.

    Fold in the apples, pecans and vanilla.

    Bake at 325° for 1 hour in a 9 x 13-inch pan.
