Fresh Apple Cake(Easy And Quick)

Ingredients

  • 1 1/2 c. vegetable oil
  • 2 c. granulated sugar
  • 3 whole eggs
  • 2 1/2 sifted self-rising flour
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 3 good size apples, peeled or unpeeled and cubed in 1/2-inch pieces (I use Red Delicious)
  • 1 c. pecan pieces

Directions

    Mix first 3 ingredients in large bowl.

    Add flour (some at a time) and add remaining ingredients.

    Stir until well mixed.

    Pour into greased tube pan or Bundt pan.

    Bake at 325° for 1 hour.

    Cool in pan until firm, about 30 minutes.

    Turn out, leaving pan over released cake an additional 30 minutes.

    This keeps cake from getting crusty.

    Use plain or with a sugar glaze on top.

    It's already excellent, but the glaze really makes it yummy.
