- 1 Tbsp. lemon juice
- 4 c. sliced pitted unpeeled apricots
- 1/2 c. light brown sugar, packed
- 1/2 c. granulated sugar
- 2 Tbsp. quick cooking tapioca
- 1/4 tsp. salt
- pastry for 2 crust pie
- 2 Tbsp. butter
Directions

1Sprinkle lemon juice over apricots in a large bowl.

2Add the sugar, tapioca and salt.

3Mix gently to combine fruit and dry ingredients.

4Let stand 15 minutes.

5Roll out half the pastry and fit into a 9-inch pie pan.
