  • 1/3 c. olive oil
  • 3/4 lb. fresh asparagus
  • 4 large green onions, chopped using white part only
  • 4 cloves garlic, chopped
  • 1/4 lb. fresh mushrooms, sliced
  • 2 medium pear tomatoes
  • 1 tsp. basil
  • 1/2 tsp. oregano
  • 1/2 c. dry white wine
  • 3/4 c. chicken broth
  • 1/2 c. pitted black olives, cut in wedges
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 Tbsp. cornstarch
  • 1 lb. pasta, cooked
  • Parmesan cheese (optional)

Directions

    Cut asparagus and onions into 1-inch diagonal pieces.

    Mix 1/2 cup of the chicken broth and the wine together; set aside.
