Fresh Broccoli Casserole

- 1 large bunch broccoli, coarsely chopped (about 6 c.)
- 6 Tbsp. butter
- 6 Tbsp. flour
- 2 c. milk
- 1 c. grated Mozzarella cheese
- 2 eggs
- 1 tsp. thyme
- 1 tsp. salt
- dash of white pepper
- 1/3 c. saltine crumbs
Directions

1Preheat oven to 350°.

2Cook broccoli until just tender.

3Drain and set aside.

4In the same pan, melt butter and blend in flour. Add milk, cooking and stirring, until thickened.

5Add cheese and stir until melted.

6Beat eggs lightly.

7Add some cream sauce to the eggs; blend and add back to the sauce.

8Add spices.

9Fold in broccoli and pour into a greased 2-quart casserole dish.

10Top with saltines and bake 30 minutes.
