- 1 1/2 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 c. grated carrot
- 1 Tbsp. lemon juice
- 3/4 c. water
- 1/3 c. vegetable oil
- 1 tsp. vanilla
- 1/2 c. chopped nuts
Directions

1Heat oven to 350°.

2Put flour, sugar, baking soda and salt into ungreased 8 or 9-inch square pan.

3Stir with fork to mix well.

4Add carrot; stir until thoroughly blended.

5Add remaining ingredients; stir to blend.

6Using rubber spatula, scrape down any ingredients clinging to sides.

7Sprinkle with nuts.

8Bake for 40 to 45 minutes, until toothpick inserted in center comes out clean. Cool in pan; cut into 9 squares.
