  • 1 c. shortening
  • 2 c. sugar
  • 4 eggs, one at a time
  • 3 c. flour
  • 2 tsp. baking powder
  • 1 c. coconut milk
  • 1 c. shredded coconut
  • 1 tsp. vanilla

Directions

    Cream shortening and sugar.

    Add eggs, one at a time.

    Sift flour and baking powder.

    Add alternately with sifted flour the coconut milk, shredded coconut and vanilla.

    Bake in two 9-inch pans or a 9 x 13-inch pan at 350° for 35 to 45 minutes.
