- 14 cup butter
- 2 large onions, minced
- 1 large green pepper, diced
- 4 cups corn kernels
- 2 large potatoes, peeled and diced
- 14 cup minced fresh parsley
- 14 cup flour
- 4 cups milk
- 2 cups heavy cream (35%)
- salt and pepper
- Tabasco sauce
Directions

1Melt butter in soup pot.

2Cook onions and peppers over low heat until soft, 7 to 10 minutes.

3Add corn.

4Cook 4 to 5 minutes more.

5Stir in potatoes and parsley, cook 3 minutes more.

6Whisk flour with a little milk.

7Stir into soup.

8Add remaining milk and cream.

9Bring to a boil.

10cover and reduce heat, simmer for 45 minutes, stirring often.

11Season to taste with salt, pepper and tabasco.
