  • 1 c. all-purpose flour
  • 1 tsp. salt
  • 1 egg, beaten
  • 3 c. fresh corn kernels (about 6 ears fresh corn)
  • 2 Tbsp. whipping cream
  • 1 Tbsp. butter, melted
  • vegetable oil

Directions

    Combine flour, baking powder, and salt in a medium bowl.

    Mix well.

    Combine egg, corn, whipping cream and butter.

    Mix well and stir in dry ingredients.

    Drop mixture by tablespoons into hot oil (375°).

    Cook until golden brown, turning once.

    Drain on paper towels.

    Serve hot.
